Urchatz is the traditional washing of hands before beginning the seder.

Usually done by pouring water on each hand over a sink or basin of some kind, we symbolically wash the hands of the person sitting nearest to us with a cloth dipped in warm water. As we stroke each hand with the cloth, we call up the loving memory of our grandmothers by saying each of their full names, one for each hand.
