Karpas is green and leafy. To many it symbolizes Spring, renewal, hope. Passover is also known as Chag Ha'aviv, the Holiday of Spring.  Salt water reminds of the sweat and tears of the hard labor of slavery the Israelites suffered.

During Passover we are instructed to feel as though we ourselves were slaves in Egypt and have been freed. Tasting the salt water, we can recall the sweat of hard work. Eating the karpas, we are free - free to dream, hope and achieve. It is up to you, what you will do with this freedom.
