Take the middle matzah and break it into two, one piece larger than the other.

The larger piece is set aside to serve as Afikoman. This is traditionally hidden, by the leader of the Seder for the children to find.

The smaller piece is put back, between the two matzot. This smaller piece, along with the top matzah is what will be used for the “Motzi-Matzah” and “Korech”

Matzah is known as the "Bread of Affliction." It is eaten for the duration of the 8 day Passover holiday in commemoration of the unleavened bread the Israelites ate while fleeing from Egypt. Matzah is eaten on Passover as way to remember the suffering of Israelites during their escape from Egypt

-Martin Luther King, Jr.
