Talmud Pesachim 116a

And they baked unleavened cakes of the dough which they brought forth out of Egypt, for it was not leavened, because they were thrust out of Egypt, for it was not leavened because they were thrust out of Egypt, and could not tarry, neither had they prepared for themselves any food.

The Unleavened Bread is eaten because our fathers were redeemed from Egypt, as it is said, and they baked unleavened cakes of the dough which they brought forth out of Egypt.

Talmud Pesachim 39b

We fulfill [our obligation] with all [things] that have the taste of marror ; we do not fulfill [our obligation] with all [things] that do not have the taste of marror .
