Why do we have to 'torture' ourselves on Pesach when we eat this pungent, bitter vegetable. Isn't Pesach supposed to be about our liberation from the Egyptians? Passover isn't just about celebrating our escape, it is about the whole story behind the relief of jews from Egypyt. We have to remember and recognize each part of the story, even if it isn't as enjoyable as finding the afikomen, because for our ancestors, it was definitely more bitter than a few spicy seconds of horserdish stinging your tounge. We taste maror to symbolize the holiness and the biterness of slavery back then. It shows us that even though we can't and won't endure the Egypt slavery times, we can recognize it by eating something that symbolizes those bitter actions.
