The word Korech translates into sandwich. It is the Tenth step to the passover seder. Korech is a sandwich made with Matzah and Lettuce/ bitter herbs. It is also a snack that you eat before the meal. We eat this to commemorate the temple times. The bitter herbs between the matzah is to show that everyone goes through hardship. The importance of the section is that we no longer sacrifice lambs, instead we eat the bitter herbs. The matzah represents bricks we use to build our life. The herbs inside are to remind us of the clay they used.
