Reminding us that we live in the so called "in between" can be very important, as it can help us remember the presence of Hashem, and make us feel humble and small compared to God. In our current times, we don't have direct interaction with Hashem, so we can forget his true and absolute power, and eating koreich can signify the life we live in. When we don't feel a direct prescene of God, we may forget to renew and continue our personal connection with him, and doing the koreich part of the seder can help remind us just how timid we are compared to Hashem.
