The Karpas is an important step in the sedar where we take our vegetable of choice we usually use parsley and we dip it into saltwater. The vegetable represents the happiness in spring after winter, the saltwater symbolizes the tears of our ancestors when they were slaves. Before dipping a vegtable into the salt water, we say a blessing which thanks Hashem for creating the fruits of the earth.
