The Karpas is traditionally placed on the seder plate below the roasted egg. This liquid that you dip the karpas in is salt water. The reason why you dip the karpas in salt water is because it symbolizes the salty tears that the Jews shed in the slavery of Egypt. Karpas can range from parsley to lettuce, but it is a main part of the seder, dipping the karpas into salt water.
