Passover celebrates the start of spring - the longer days and everything growning, starting again. We eat karpas (green vegetable) to mark the start of spring. While we remember the new beginnings that come with spring, we also must remember the hard work the Jews were forced to do by the Pharaoh. For that, we dip our karpas in salt water. 

בָּרוּךְ אַתָּה יְיָ, אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם, בּוֹרֵא פְּרִי הָאֲדָמָה

Baruch Atah Adonai, Eloheinu Melech ha-olam, borei p’ree ha-adama.

We praise God, Ruler of Everything, who creates the fruits of the earth.
